  • 120 grams all-purpose flour
  • 1 egg
  • 60 grams grated Parmesan cheese
  • 0.5 teaspoon ground black pepper
  • 1 pinch nutmeg
  • 450 grams ricotta cheese
  • 1 teaspoon salt

Directions

Step 1
In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, egg, salt, black pepper, and nutmeg.

Gradually add the flour to the mixture, stirring gently until a dough forms.

Lightly flour a surface and roll the dough into small balls, about 2.5 cm in diameter.
Step 4
Bring a large pot of salted water to a boil.
Step 5
Gently drop the gnudi into the boiling water and cook until they float to the surface, about 3-4 minutes.
Step 6
Remove the gnudi with a slotted spoon and serve with your favorite sauce.
