Step 1
Heat the olive oil in a large pot over medium heat.

Add the oxtail pieces and brown on all sides.

Remove the oxtail and set aside.

In the same pot, add the chopped onion, carrots, and celery. Cook until the vegetables are softened.

Stir in the minced garlic and tomato paste. Cook for another 2 minutes.

Return the oxtail to the pot and pour in the beef broth.

Add the bay leaves, dried thyme, salt, and black pepper.

Bring the soup to a boil, then reduce heat and let it simmer for about 2 hours, until the oxtail is tender.

Add the diced potatoes and continue to cook until they are tender, about 20 minutes.
