Ingredients

  • 1 tsp black pepper
  • 2 garlic cloves
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 2 tbsp parsley
  • 30 g pine nuts
  • 500 g pork tenderloin
  • 50 g raisins
  • 1 red onion
  • 120 ml red wine vinegar
  • 1 tsp salt

Directions

Step 1
Season the pork tenderloin with salt and black pepper.
Step 2
Heat the olive oil in a large skillet over medium-high heat.
Step 3
Add the pork tenderloin and cook until browned on all sides, about 8 minutes.
Step 4
Remove the pork from the skillet and set aside.
Step 5
In the same skillet, add the red onion and garlic, and cook until softened, about 5 minutes.
Step 6
Stir in the red wine vinegar, honey, raisins, and pine nuts. Bring to a simmer.
Step 7
Return the pork to the skillet and cook, turning occasionally, until the sauce is thickened and the pork is cooked through, about 10 minutes.
Step 8
Sprinkle with fresh parsley before serving.
