Step 1
Preheat your oven to 200°C (392°F).

Roll out the puff pastry and cut into circles to fit your muffin tin. Press the pastry circles into the muffin tin to form cups.

In a saucepan, combine the sugar, water, cinnamon stick, and lemon peel. Bring to a boil and cook until the sugar is dissolved. Remove from heat and let cool.

In another saucepan, heat the milk until warm. In a bowl, whisk the flour with a bit of the warm milk to form a smooth paste. Gradually add the rest of the milk, stirring constantly.

Return the milk mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.

Remove from heat and let cool slightly. Remove the cinnamon stick and lemon peel from the sugar syrup and combine the syrup with the milk mixture.

In a bowl, whisk the egg yolks and vanilla extract. Gradually add the egg mixture to the milk mixture, stirring constantly.

Pour the custard filling into the pastry cups, filling them almost to the top.

Bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and the custard is set.
