  • 1 apple
  • 2 bay leaves
  • 1 tsp caraway seeds
  • 10 juniper berries
  • 1 onion
  • 1 tsp pepper
  • 1 tsp salt
  • 900 g sauerkraut
  • 200 g smoked bacon
  • 250 ml vegetable broth
  • 250 ml white wine

Directions

Step 1
Rinse the sauerkraut under cold water and drain well.
Step 2
In a large pot, cook the diced bacon over medium heat until crispy.
Step 3
Add the chopped onion to the pot and sauté until translucent.

Stir in the grated apple and cook for another 2-3 minutes.

Add the rinsed sauerkraut, juniper berries, bay leaves, white wine, and vegetable broth to the pot.

Season with caraway seeds, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer for about 60 minutes, stirring occasionally.
Step 8
Remove the bay leaves and juniper berries before serving.
