  • 60 ml apple cider vinegar
  • 5 g black pepper
  • 2 g cayenne pepper
  • 30 g chili powder
  • 5 g dried oregano
  • 5 g garlic powder
  • 5 g ground coriander
  • 5 g ground cumin
  • 900 g ground pork
  • 10 g paprika
  • 10 g salt

Directions

Step 1
In a large bowl, combine the ground pork and apple cider vinegar.
Step 2
Add the chili powder, paprika, garlic powder, dried oregano, ground cumin, ground coriander, salt, black pepper, and cayenne pepper to the bowl.
Step 3
Mix the ingredients thoroughly with your hands until well combined.
Step 4
Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Step 5
Use the chorizo immediately in your favorite recipes, or portion and freeze for later use.
