  • 4 tablespoons black peppercorns
  • 2 tablespoons butter
  • 60 milliliters cognac
  • 120 milliliters heavy cream
  • 1 tablespoon olive oil
  • 2 teaspoons salt
  • 4 steak

Directions

Step 1
Season the steaks on both sides with salt and then press the crushed peppercorns into both sides of each steak, ensuring they adhere well.
Step 2
In a large skillet, heat the butter and olive oil over medium-high heat until the butter is melted and the mixture is hot.
Step 3
Add the steaks to the skillet and cook for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness.
Step 4
Remove the steaks from the skillet and set them aside to rest while you prepare the sauce.

Carefully add the cognac to the skillet, taking care as it may flame up. Stir and scrape up any browned bits from the bottom of the skillet.

Allow the cognac to reduce by half, then add the heavy cream. Stir and cook until the sauce has thickened, about 3-5 minutes.
Step 7
Return the steaks to the skillet to warm through for a minute, then serve immediately with the sauce spooned over the top.
