A delicious and hearty vegetable lasagna packed with a variety of vegetables and layers of rich, cheesy goodness. Perfect for a family dinner or special occasion.

Step 1
Preheat the oven to 375°F (190°C).

Cook the lasagna noodles according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, and sauté until the onion is translucent.

Add the bell pepper, carrot, and zucchini to the skillet. Cook until the vegetables are tender.

Add the spinach and cook until wilted. Remove from heat and set aside.

In a large bowl, combine the ricotta cheese, egg, dried basil, dried oregano, salt, and black pepper.

Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.

Place a layer of lasagna noodles over the sauce. Spread one-third of the ricotta mixture over the noodles, followed by one-third of the vegetable mixture, and one-third of the mozzarella cheese.

Repeat the layers two more times, ending with a layer of marinara sauce and a final layer of mozzarella cheese.

Sprinkle the grated parmesan cheese over the top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Allow the lasagna to cool for 10 minutes before serving.
