Directions
Step 1
Place the peeled garlic cloves and salt in a food processor. Process until the garlic is finely minced.
Step 2
Scrape down the sides of the bowl and add a small amount of lemon juice. Continue to process until a paste forms.
Step 3
With the processor running, start adding the oil in a slow, steady stream. Alternate between adding the oil and the lemon juice to maintain the emulsion.
Step 4
If the mixture becomes too thick, add a small amount of ice water to thin it out.
Step 5
Continue processing until all the oil and lemon juice have been incorporated and the toum is thick and fluffy.
Step 6
Transfer the toum to a container and refrigerate for at least 30 minutes before serving.
