  • 1 bell pepper
  • 1 can black beans
  • 0.5 teaspoon black pepper
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 0.5 cup cilantro
  • 1 cup corn kernels
  • 1 teaspoon cumin
  • 1 can diced tomatoes
  • 3 garlic cloves
  • 1 lime
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon salt
  • 1 zucchini

Directions

Step 1
Heat the olive oil in a large pot over medium heat.
Step 2
Add the diced onion and sauté until translucent, about 5 minutes.

Add the minced garlic and cook for another minute.

Stir in the chopped bell pepper and zucchini, and cook for 5 minutes until they start to soften.

Add the corn kernels, diced tomatoes, black beans, and chicken broth.
