Directions
Step 1
Remove stems and seeds from the dried chiles.
Step 2
Place chiles in a bowl and cover with hot water. Soak for 30 minutes.
Step 3
Drain chiles and transfer to a blender. Add garlic, onion, cumin, oregano, and 250 ml of beef broth. Blend until smooth.
Step 4
Heat vegetable oil in a large pot over medium-high heat. Brown the beef on all sides.
Step 5
Pour the chile sauce over the beef and add remaining beef broth. Season with salt and pepper.
Step 6
Bring to a boil, then reduce heat to low, cover, and simmer for 2 hours until the beef is tender.

Serve hot with rice or tortillas.
