Ingredients

  • 2 bay leaves
  • 500 ml beef broth
  • 1.5 kg beef chuck roast
  • 0.5 tsp black pepper
  • 3 carrot
  • 3 celery stalks
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 2 onion
  • 250 ml red wine
  • 1 tsp salt
  • 1 tsp thyme
  • 60 g tomato paste

Directions

Step 1
Preheat the oven to 160°C (325°F).
Step 2
Season the beef chuck roast with salt and black pepper.
Step 3
In a large Dutch oven, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.
Step 4
In the same pot, add the onions, carrots, and celery. Cook until softened, about 5-7 minutes.

Add the garlic and tomato paste, cooking for another 2 minutes.
Step 6
Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 5 minutes.

Add the beef broth, bay leaves, and thyme. Return the beef to the pot, ensuring it is submerged in the liquid.
Step 8
Cover the pot with a lid and transfer it to the preheated oven. Braise for 3 hours, or until the beef is tender and easily shredded with a fork.
Step 9
Remove the pot from the oven and let it rest for 10 minutes before serving. Discard the bay leaves and slice the beef. Serve with the vegetables and sauce.
