Preheat your oven to 160°C (325°F) and line a baking sheet with parchment paper.

In a mixing bowl, crumble the almond paste and break it up with a fork.

Add the granulated sugar, powdered sugar, egg whites, and salt to the bowl. Mix thoroughly until a smooth dough forms.

With slightly wet hands, form small balls of dough, about 2.5 cm (1 inch) in diameter.

Roll each ball in the pine nuts, pressing gently to ensure they adhere to the dough.
Step 6
Place the coated balls on the prepared baking sheet, spacing them about 5 cm (2 inches) apart.

Bake in the preheated oven for 15-20 minutes, or until the cookies are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
