Ingredients

  • 125 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon sugar
  • 240 milliliters unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 60 milliliters water

Directions

Step 1
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
Step 2
Add the almond milk, water, vegetable oil, and vanilla extract to the dry ingredients and mix until just combined. Do not over mix.
Step 3
Heat a non-stick skillet over medium heat. Lightly grease with oil if needed.
Step 4
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Step 5
Flip the pancakes and cook for another 2-3 minutes, until golden brown and cooked through.
Step 6
Serve warm with your favorite toppings such as maple syrup, fresh fruits, or vegan butter.
