Step 1
In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned. Remove beef and set aside.

In the same pot, add diced onion, minced garlic, diced carrots, and diced celery. Cook until vegetables are softened.

Stir in the chopped cabbage and cook for another 5 minutes.

Add the cooked ground beef back to the pot along with tomato sauce, beef broth, uncooked rice, bay leaf, dried thyme, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 30 minutes, or until the rice is cooked and the cabbage is tender.
