Delicious and moist banana muffins with chocolate chips, perfect for breakfast or a snack. These muffins are easy to make and a great way to use up overripe bananas.

  • 250 g all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 175 g chocolate chips
  • 1 egg
  • 3 mashed bananas
  • 80 g melted butter
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 150 g white sugar

Directions

Step 1
Preheat your oven to 175°C (350°F). Grease or line a muffin tin with paper liners.
Step 2
In a large bowl, mix together the flour, baking powder, baking soda, and salt.
Step 3
In another bowl, beat together the bananas, sugar, egg, melted butter, and vanilla extract.
Step 4
Stir the wet ingredients into the dry ingredients until just combined. Do not overmix.
Step 5
Fold in the chocolate chips.
Step 6
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Step 7
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 8
Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
