  • 6 slices bacon
  • 0.5 tsp black pepper
  • 2 tbsp butter
  • 2 cups chicken broth
  • 14.5 oz diced tomatoes
  • 2 cloves garlic
  • 1 green bell pepper
  • 2 cups long grain rice
  • 1 onion
  • 1 tsp salt
  • 1 tsp sugar
  • 6 oz tomato paste

Directions

Step 1
Cook the bacon in a large skillet over medium heat until crispy. Remove from skillet, crumble, and set aside.
Step 2
In the same skillet, add the chopped onion, green bell pepper, and minced garlic. Cook until the vegetables are tender.
Step 3
Stir in the tomato paste, diced tomatoes, chicken broth, salt, black pepper, and sugar. Bring to a boil.
Step 4
Add the rice to the skillet, reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is tender and the liquid is absorbed.
Step 5
Stir in the crumbled bacon and butter. Mix well and serve hot.
