Ingredients

  • 800 ml coconut milk
  • 60 g cornstarch
  • 1 tsp ground cinnamon
  • 1 pinch salt
  • 100 g sugar
  • 120 ml water

Directions

Step 1
In a medium saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is fully dissolved.
Step 2
In a separate bowl, whisk together the cornstarch and water until smooth.
Step 3
Gradually add the cornstarch mixture to the coconut milk mixture, stirring constantly.
Step 4
Continue to cook the mixture over medium heat, stirring constantly, until it thickens and starts to bubble.
Step 5
Once thickened, pour the mixture into a serving dish or individual serving cups.
Step 6
Allow the pudding to cool to room temperature, then refrigerate for at least 3 hours or until fully set.
Step 7
Before serving, sprinkle ground cinnamon on top for garnish.
