Ingredients

  • 1 tsp baking powder
  • 2 tbsp butter
  • 120 g flour
  • 250 ml milk
  • 4 potatoes
  • 1 tsp salt

Directions

Step 1
Peel and grate the potatoes. Place the grated potatoes in a clean cloth and wring out the excess moisture.
Step 2
In a large bowl, combine the grated potatoes, flour, baking powder, and salt. Mix well.

Gradually add the milk to the potato mixture, stirring constantly until you get a batter-like consistency.

Heat a frying pan over medium heat and add a tablespoon of butter.
Step 5
Spoon the batter into the hot pan, forming small pancakes. Cook until golden brown on each side, approximately 3-4 minutes per side.
Step 6
Repeat with the remaining batter, adding more butter to the pan as needed.
Step 7
Serve the Boxty hot, with your favorite toppings or accompaniments.
