  • 250 g all-purpose flour
  • 4 apples
  • 50 g brown sugar
  • 15 g coarse sugar
  • 1 egg
  • 50 g granulated sugar
  • 1 tsp ground cinnamon
  • 60 ml ice water
  • 15 ml lemon juice
  • 1 tsp salt
  • 170 g unsalted butter

Directions

Step 1
In a large bowl, combine the flour, granulated sugar, and salt. Add the cold butter and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
Step 2
Gradually add the ice water, one tablespoon at a time, and mix until the dough starts to come together. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Step 3
Preheat the oven to 200°C (400°F).

In a large bowl, toss the apple slices with lemon juice, brown sugar, and ground cinnamon.

On a lightly floured surface, roll out the dough into a large circle about 1/4 inch thick. Transfer the dough to a parchment-lined baking sheet.

Arrange the apple slices in the center of the dough, leaving a 2-inch border around the edges. Fold the edges of the dough over the apples, pleating as necessary.

Brush the edges of the dough with the beaten egg and sprinkle with coarse sugar.

Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown and the apples are tender.
