These colorful and delightful cookies are perfect for any festive occasion. Layered with almond paste and apricot preserves, they are sure to be a hit at any gathering.
Directions
Step 1
Preheat the oven to 350°F (175°C). Grease three 9x13 inch baking pans and line them with parchment paper.

In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the almond paste until well blended.

Beat in the egg yolks one at a time, mixing well after each addition. Gradually mix in the flour to form a dough.

In a separate bowl, whip the egg whites until stiff peaks form. Fold the egg whites into the dough until just combined.

Divide the dough into three equal parts. Tint one part with red food coloring, another with green food coloring, and leave the third part plain.

Spread each portion of dough evenly into the prepared pans.

Bake for 10-12 minutes in the preheated oven, until just set. Allow to cool completely.
Step 8
Spread half of the apricot preserves over the green layer. Place the plain layer on top, and spread with the remaining preserves. Top with the red layer.
Step 9
Melt the chocolate chips in a double boiler or microwave, and spread over the top of the red layer. Allow to set, then cut into small squares to serve.
