  • 100 g bacon
  • 0.5 tsp black pepper
  • 30 g butter
  • 2 stalks celery
  • 500 ml chicken broth
  • 500 g clams
  • 30 g flour
  • 250 ml heavy cream
  • 500 ml milk
  • 1 onion
  • 400 g potatoes
  • 1 tsp salt
  • 1 tsp thyme

Directions

Step 1
Cook the diced bacon in a large pot over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.

Add the chopped onion and celery to the pot and sauté until softened, about 5 minutes.

Stir in the butter and let it melt completely. Then, add the flour and cook for 2 minutes, stirring constantly.

Slowly whisk in the milk and chicken broth, ensuring there are no lumps.

Add the diced potatoes, salt, pepper, and thyme. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

Stir in the chopped clams, heavy cream, and cooked bacon. Cook for an additional 5 minutes, until the clams are heated through.

Adjust seasoning with more salt and pepper if needed and serve hot.
