Chicken Rice Porridge, also known as Arroz Caldo, is a comforting Filipino dish made with chicken, rice, and ginger. It's perfect for a hearty breakfast or a warming meal on a cold day.

Ingredients

  • calamansi or lemon
  • 500 g chicken
  • 3 tbsp fish sauce
  • 5 cloves garlic
  • 30 g ginger
  • 1 onion
  • 1 tsp pepper
  • 200 g rice
  • 1 tsp salt
  • 50 g spring onions
  • 1500 ml water

Directions

Step 1
Heat oil in a large pot over medium heat.
Step 2
Sauté ginger, garlic, and onion until fragrant.
Step 3
Add chicken pieces and cook until they turn white.
Step 4
Add fish sauce and cook for another 3 minutes.
Step 5
Add rice and stir to coat with the mixture.
Step 6
Pour in water and bring to a boil.
Step 7
Lower the heat and simmer until rice is fully cooked and the mixture has thickened, about 30-40 minutes.
Step 8
Season with salt and pepper to taste.
Step 9
Garnish with spring onions and serve with calamansi or lemon on the side.
