Directions
Step 1
In a large bowl, sift together the flour, sugar, baking powder, and salt.

In another bowl, beat the egg and then add the milk and oil. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just blended. The batter should be slightly lumpy.

Gently fold in the blueberries.

Heat a lightly oiled griddle or frying pan over medium-high heat.

Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.

Brown on both sides and serve hot.
