Molletes are a popular Mexican open-faced sandwich typically served for breakfast or as a snack. They feature refried beans, melted cheese, and a pico de gallo topping on a crusty bread roll.

Ingredients

  • 4 bolillos rolls
  • 200 g cheddar cheese
  • 30 g cilantro
  • 1 jalapeno
  • 1 lime
  • 1 onion
  • 400 g refried beans
  • 1 pinch salt
  • 2 tomatoes

Directions

Step 1
Preheat the oven to 200°C (392°F).
Step 2
Spread a generous amount of refried beans on each half of the bolillos rolls.
Step 3
Sprinkle shredded cheddar cheese over the beans.
Step 4
Place the rolls on a baking sheet and bake in the oven until the cheese is melted and bubbly, about 10 minutes.
Step 5
While the rolls are baking, prepare the pico de gallo by combining the diced tomatoes, chopped onion, chopped cilantro, chopped jalapeno, lime juice, and a pinch of salt in a bowl.
Step 6
Remove the rolls from the oven and top each with a spoonful of pico de gallo.
Step 7
