  • 425 g canned black beans
  • 425 g canned garbanzo beans
  • 425 g canned kidney beans
  • 300 g frozen corn
  • 2 cloves garlic
  • 1 green bell pepper
  • 15 ml lemon juice
  • 60 ml olive oil
  • 30 g parsley
  • 1 red bell pepper
  • 1 red onion
  • 60 ml red wine vinegar
  • 5 g salt

Directions

Step 1
In a large bowl, combine the black beans, kidney beans, garbanzo beans, and corn.
Step 2
Add the chopped red bell pepper, green bell pepper, red onion, and parsley.
Step 3
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, salt, and black pepper.
Step 4
Pour the dressing over the bean mixture and toss to coat evenly.
