Step 1
Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

In another bowl, mix together the pumpkin puree, vegetable oil, eggs, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
