Ingredients

  • 225 g acini di pepe pasta
  • 1 egg yolk
  • 30 g flour
  • 15 ml lemon juice
  • 300 g mandarin oranges
  • 150 g miniature marshmallows
  • 565 g pineapple chunks
  • 375 ml pineapple juice
  • 150 g sugar
  • 225 g whipped topping

Directions

Step 1
Cook acini di pepe pasta according to package directions. Drain and rinse under cold water.
Step 2
In a saucepan, combine sugar, flour, and 1/2 teaspoon of salt. Stir in pineapple juice and lemon juice. Cook over medium heat until thickened and bubbly.
Step 3
Stir a small amount of the hot mixture into the beaten egg yolk, then return all to the saucepan. Cook and stir for 2 minutes more. Remove from heat and let cool.
Step 4
In a large bowl, combine cooked pasta, drained pineapple chunks, and mandarin oranges.
Step 5
Fold in the cooled sauce, whipped topping, and miniature marshmallows. Mix until well combined.
Step 6
Cover and refrigerate for at least 2 hours before serving to allow flavors to blend.
