  • 120 g breadcrumbs
  • 2 eggplant
  • 2 eggs
  • 120 g flour
  • 60 ml olive oil
  • 1 tsp salt

Directions

Step 1
Slice the eggplants into rounds about 1/4 inch thick.

Sprinkle the slices with salt and let them sit for 30 minutes to draw out moisture.

Pat the eggplant slices dry with paper towels.

Dredge each slice in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

Heat the olive oil in a large skillet over medium heat.
