Texas Caviar, also known as Cowboy Caviar, is a vibrant and zesty salad featuring black-eyed peas, corn, and a medley of fresh vegetables. It's perfect as a dip with chips or a side dish for any gathering.

  • 1 bell pepper
  • 450 g black beans
  • 2 g black pepper
  • 450 g black-eyed peas
  • 30 g cilantro
  • 350 g corn
  • 2 jalapeno
  • 30 ml lime juice
  • 60 ml olive oil
  • 1 red onion
  • 60 ml red wine vinegar
  • 5 g salt
  • 2 tomatoes

Directions

Step 1
In a large bowl, combine the black-eyed peas, corn, black beans, tomatoes, green bell pepper, red onion, jalapenos, and cilantro.
Step 2
In a small bowl, whisk together the olive oil, red wine vinegar, lime juice, salt, and black pepper.
Step 3
Pour the dressing over the vegetable mixture and toss to coat evenly.
Step 4
Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
Step 5
Serve chilled with tortilla chips or as a side dish.
