  • 100 ml olive oil
  • 1 onion
  • 500 g potatoes
  • 1 tsp salt

Directions

Step 1
Peel and thinly slice the potatoes and onion.

Heat olive oil in a large frying pan over medium heat.

Add the potatoes and onion to the pan, cooking until soft and lightly golden, about 20-25 minutes.

In a large bowl, beat the eggs and season with salt.

Drain the potatoes and onions from the oil and mix them into the beaten eggs.

Heat a small amount of the reserved oil in the pan over medium heat.

Pour the egg mixture into the pan and cook on low heat until the edges start to set, about 5 minutes.
Step 8
Carefully flip the omelette using a plate and cook the other side until fully set, about 5 more minutes.
Step 9
Slide the omelette onto a plate and let it cool slightly before serving.
