Ingredients

  • 1 bay leaf
  • 0.5 tsp black pepper
  • 3 carrots
  • 2 celery stalks
  • 2 chicken breasts
  • 1500 ml chicken broth
  • 200 g egg noodles
  • 3 garlic cloves
  • 1 onion
  • 2 tbsp parsley
  • 1 tsp salt

Directions

Step 1
In a large pot, combine chicken breasts, sliced carrots, celery, chopped onion, and minced garlic.
Step 2
Pour in the chicken broth and add the bay leaf. Season with salt and black pepper.
Step 3
Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for about 20 minutes, or until the chicken is cooked through.
Step 4
Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.
Step 5
Add the egg noodles to the pot and cook according to the package instructions, usually about 8-10 minutes.
Step 6
Stir in the fresh parsley and adjust seasoning with more salt and pepper if needed.
