Step 1
Boil the potatoes in salted water until tender, about 20 minutes.

Peel and mash the potatoes while still warm. Let them cool slightly.

Mix the mashed potatoes with the flour and egg to form a dough.

On a floured surface, roll the dough into long ropes and cut into 2 cm pieces to form gnocchi.

Bring a large pot of salted water to a boil. Cook the gnocchi until they float to the surface, about 2-3 minutes.

In a separate pan, melt the butter and add the sage leaves, cooking until the butter turns golden brown.

Drain the gnocchi and add them to the sage-butter sauce. Toss to coat.
