Homemade Liverwurst

A delicious and rich liverwurst recipe that you can easily make at home. This spreadable sausage is perfect for sandwiches or as a savory snack.

Ingredients

  • 5 g black pepper
  • 3 garlic cloves
  • 5 g marjoram
  • 100 ml milk
  • 2 g nutmeg
  • 1 onion
  • 200 g pork fatback
  • 500 g pork liver
  • 500 g pork shoulder
  • 10 g salt

Directions

Step 1
Cut the pork liver, shoulder, and fatback into small pieces.
Step 2
Peel and finely chop the onion and garlic.
Step 3
In a large pot, bring some water to a boil and add the pork liver, shoulder, and fatback. Boil for 10 minutes.
Step 4
Remove the meat from the pot and let it cool slightly.
Step 5
Grind the cooked meat, onion, and garlic through a meat grinder.
Step 6
Add salt, black pepper, marjoram, nutmeg, and milk to the ground meat mixture. Mix thoroughly.
Step 7
Pack the mixture into sausage casings or a loaf pan.
Step 8
If using a loaf pan, bake in a preheated oven at 160°C for 1 hour, or until the internal temperature reaches 70°C.
Step 9
Let the liverwurst cool completely before slicing and serving.
