Step 1
Turn on the Instant Pot and select the sauté function. Add olive oil.
Step 2
Once the oil is hot, add chopped onion and minced garlic. Sauté until the onion is translucent.

Add sliced carrots and celery, and continue to sauté for another 3-4 minutes.

Add the chicken breast, chicken broth, bay leaf, dried thyme, salt, and black pepper.

Close and lock the lid of the Instant Pot. Select the Soup function and set the time to 10 minutes.

Once the cooking time is complete, perform a quick release of the pressure.
Step 7
Open the lid and remove the chicken breast. Shred the chicken using two forks and return it to the pot.

Add the egg noodles and select the sauté function again. Cook for an additional 5 minutes, or until the noodles are tender.

Taste and adjust the seasoning if necessary. Serve hot.
