Traditional Kulfi

Kulfi is a popular Indian frozen dessert made with milk, sugar, and flavored with cardamom and saffron. It's a rich and creamy treat that's perfect for hot summer days.

Ingredients

  • 5 pieces cardamom
  • 1.5 liters milk
  • 50 grams pistachios
  • 1 pinch saffron
  • 150 grams sugar

Directions

Step 1
Boil the milk in a heavy-bottomed pan over medium heat.
Step 2
Reduce the heat and simmer the milk, stirring frequently, until it reduces to about half its original volume.
Step 3
Add the sugar, crushed cardamom, and saffron. Stir well to combine.
Step 4
Continue to simmer for another 10-15 minutes, stirring frequently.
Step 5
Remove the pan from heat and let the mixture cool to room temperature.
Step 6
Pour the mixture into kulfi molds or small cups. Sprinkle chopped pistachios on top.
Step 7
Freeze the molds for at least 6 hours, or until the kulfi is completely set.
Step 8
To serve, dip the molds in warm water for a few seconds to loosen the kulfi. Unmold and enjoy!
