Step 1
Season the chicken breasts with salt and black pepper on both sides.

Dredge the chicken in flour, shaking off any excess.

In a shallow bowl, beat the eggs and mix in the grated Parmesan cheese.

Heat olive oil and butter in a large skillet over medium-high heat.

Dip each chicken breast in the egg mixture, allowing the excess to drip off, and place them in the skillet.
