Chicken Francese is a delightful Italian-American dish featuring chicken breasts coated in a light egg batter, then cooked in a lemony butter sauce. It's a perfect combination of crispy and tender chicken with a zesty tang from the lemon sauce.

Ingredients

  • 120 g all-purpose flour
  • 1 tsp black pepper
  • 60 g butter
  • 4 chicken breasts
  • 240 ml chicken broth
  • 4 eggs
  • 80 ml lemon juice
  • 60 ml olive oil
  • 50 g parmesan cheese
  • 30 g parsley
  • 1 tsp salt

Directions

Step 1
Season the chicken breasts with salt and black pepper on both sides.
Step 2
Dredge the chicken in flour, shaking off any excess.
Step 3
In a shallow bowl, beat the eggs and mix in the grated Parmesan cheese.
Step 4
Heat olive oil and butter in a large skillet over medium-high heat.
Step 5
Dip each chicken breast in the egg mixture, allowing the excess to drip off, and place them in the skillet.
Step 6
Cook the chicken until golden brown on each side, about 4-5 minutes per side. Remove from skillet and set aside.

In the same skillet, add lemon juice and chicken broth, scraping up any browned bits from the bottom of the pan.
Step 8
Bring the sauce to a boil, then reduce the heat and simmer for about 5 minutes.
Step 9
Return the chicken to the skillet, spooning some sauce over the top. Simmer for another 2-3 minutes until the chicken is cooked through.
Step 10
Garnish with chopped parsley and serve hot.
