Step 1
In a large pot, add the chicken thighs and water. Bring to a boil and then reduce the heat to simmer.

Skim off any foam that forms on the surface.

Add the minced garlic, chopped onion, sliced carrots, and sliced celery to the pot. Simmer for about 20 minutes.

Add the diced potatoes, sliced zucchini, and corn pieces. Continue to simmer for another 20 minutes until all vegetables are tender.

Season the soup with salt and pepper to taste.

Remove the chicken thighs, shred the meat, and return it to the pot.
