Ingredients

  • 30 grams butter
  • 45 grams cornstarch
  • 4 egg yolks
  • 480 ml milk
  • 1 pinch salt
  • 150 grams sugar
  • 5 ml vanilla extract

Directions

Step 1
In a medium saucepan, combine sugar, cornstarch, and salt.
Step 2
Gradually whisk in milk until smooth.
Step 3
Cook over medium heat, stirring constantly, until mixture comes to a boil and thickens.
Step 4
Reduce heat to low and cook for 2 more minutes, stirring constantly.
Step 5
Remove from heat and gradually whisk about 1 cup of the hot mixture into the beaten egg yolks.
Step 6
Return the egg yolk mixture to the saucepan and bring to a gentle boil, stirring constantly.
Step 7
Cook for 2 more minutes, then remove from heat.
Step 8
Stir in butter and vanilla extract until fully melted and combined.
Step 9
Pour pudding into individual serving dishes or a large bowl and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Step 10
Let cool at room temperature, then refrigerate for at least 2 hours before serving.
