A simplified version of the classic French beef stew, rich with flavors of red wine, mushrooms, and tender beef. Perfect for a cozy dinner.
Directions
Step 1
In a large pot, heat the olive oil over medium heat.

Add the bacon and cook until crispy. Remove the bacon and set aside.

In the same pot, add the beef chunks and sear until browned on all sides. Remove and set aside.

Add the onions and carrots to the pot and cook until the onions are translucent.

Add the garlic and cook for another minute.

Stir in the flour and cook for 2 minutes until lightly browned.

Return the beef and bacon to the pot. Add the red wine, beef broth, tomato paste, thyme, bay leaves, salt, and pepper.

Bring to a boil, then reduce the heat and let it simmer for 2 hours, or until the beef is tender.

In the last 30 minutes of cooking, add the mushrooms.

Remove the bay leaves before serving. Serve hot with a side of mashed potatoes or crusty bread.
