Ingredients

  • 1 carrot
  • 500 g cooked rice
  • 3 eggs
  • 100 g frozen peas
  • 0.5 tsp pepper
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 2 spring onions
  • 2 tbsp vegetable oil

Directions

Step 1
Heat 1 tbsp of vegetable oil in a large pan or wok over medium heat.
Step 2
Beat the eggs in a bowl, then add to the pan. Scramble the eggs until fully cooked, then remove from the pan and set aside.
Step 3
Add the remaining 1 tbsp of vegetable oil to the pan. Add the diced carrot and cook for 2-3 minutes until slightly tender.
Step 4
Add the frozen peas and chopped spring onions to the pan. Cook for another 2 minutes.
Step 5
Add the cooked rice to the pan and stir well to combine all the ingredients.
Step 6
Return the scrambled eggs to the pan and mix them into the rice.
Step 7
Add the soy sauce, salt, and pepper. Stir well to ensure the rice is evenly coated with the seasonings.
Step 8
Cook for another 2-3 minutes, stirring occasionally, until everything is heated through.
