  • 225 grams all-purpose flour
  • 1 teaspoon baking powder
  • 85 grams caster sugar
  • 50 grams currants
  • 1 egg
  • 1 tablespoon milk
  • 0.5 teaspoon mixed spice
  • 0.5 teaspoon salt
  • 110 grams unsalted butter

Directions

Step 1
In a large mixing bowl, sift together the flour, baking powder, mixed spice, and salt.

Add the diced butter and rub it into the flour mixture until it resembles fine breadcrumbs.

Stir in the caster sugar and currants.
Step 4
Add the beaten egg and milk to the mixture and stir until it forms a soft dough.

Roll out the dough on a lightly floured surface to about 1/4 inch thick.

Use a round cutter to cut out circles from the dough.

Heat a griddle or heavy frying pan over medium heat and lightly grease it.

Cook the cakes on the griddle for about 3 minutes on each side, until golden brown.
