Steamed Rice Cakes, also known as Puto, are a traditional Filipino delicacy. These soft and fluffy cakes are perfect for breakfast or as a snack. They are typically served with grated coconut or as a side to savory dishes.

Ingredients

  • 1 tbsp baking powder
  • 2 tbsp butter
  • 1.5 cups coconut milk
  • 1 egg
  • 2 cups rice flour
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 0.5 cup water

Directions

Step 1
In a large bowl, combine rice flour, sugar, and baking powder.
Step 2
In another bowl, mix coconut milk, water, egg, melted butter, and vanilla extract.
Step 3
Gradually add the wet ingredients to the dry ingredients, stirring until smooth.
Step 4
Pour the batter into small molds, filling them about three-quarters full.
Step 5
Prepare a steamer and steam the batter-filled molds for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Step 6
Allow the rice cakes to cool slightly before removing them from the molds. Serve warm.
