Step 1
In a large bowl, combine rice flour, sugar, and baking powder.

In another bowl, mix coconut milk, water, egg, melted butter, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until smooth.

Pour the batter into small molds, filling them about three-quarters full.
Step 5
Prepare a steamer and steam the batter-filled molds for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow the rice cakes to cool slightly before removing them from the molds. Serve warm.
