Ingredients

  • 0.5 tsp black pepper
  • 150 g cherry tomatoes
  • 1 cucumber
  • 2 tbsp lemon juice
  • 200 g mixed greens
  • 3 tbsp olive oil
  • 1 red onion
  • 300 g salmon fillet
  • 1 tsp salt

Directions

Step 1
Season the salmon fillet with salt and black pepper.
Step 2
Heat 1 tbsp of olive oil in a pan over medium heat.
Step 3
Cook the salmon fillet for 4-5 minutes on each side or until fully cooked. Let it cool slightly, then flake it into large pieces.
Step 4
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
Step 5
In a small bowl, whisk together the remaining olive oil and lemon juice.
Step 6
Drizzle the dressing over the salad and toss gently to combine.
Step 7
Top the salad with the flaked salmon pieces.
Step 8
