A delicious and hearty enchilada casserole that's perfect for family dinners or gatherings. It's a layered dish with tortillas, seasoned meat, cheese, and enchilada sauce, baked to perfection.

Ingredients

  • 100 g chopped green chilies
  • 12 corn tortillas
  • 600 ml enchilada sauce
  • 50 g fresh cilantro
  • 2 garlic cloves
  • 500 g ground beef
  • 300 g shredded cheddar cheese
  • 100 g sliced black olives
  • 1 packet taco seasoning
  • 1 yellow onion

Directions

Step 1
Preheat your oven to 180°C (350°F).
Step 2
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Step 3
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Step 4
Stir in the taco seasoning and cook for another 2-3 minutes.
Step 5
Spread a thin layer of enchilada sauce on the bottom of a baking dish.
Step 6
Layer 4 corn tortillas over the sauce, overlapping as necessary.
Step 7
Spread half of the beef mixture over the tortillas.
Step 8
Pour a third of the remaining enchilada sauce over the beef mixture.
Step 9
Sprinkle a third of the shredded cheddar cheese over the sauce.
Step 10
Repeat the layers: tortillas, beef mixture, sauce, and cheese.
Step 11
Finish with a final layer of tortillas, the remaining sauce, and the remaining cheese.
Step 12
Top with sliced black olives and chopped green chilies.
Step 13
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
Step 14
Garnish with fresh cilantro before serving.
