A traditional fruitcake packed with dried fruits, nuts, and spices. Perfect for holidays and special occasions.
Directions
Step 1
Preheat your oven to 150°C (300°F). Grease and line a 20 cm round cake tin.
Step 2
In a large bowl, cream the butter and sugar together until light and fluffy.
Step 3
Beat in the eggs one at a time, mixing well after each addition.
Step 4
Sift the flour, baking powder, and mixed spice together and fold into the butter mixture.
Step 5
Stir in the mixed dried fruits, chopped nuts, and brandy until well combined.
Step 6
Spoon the mixture into the prepared cake tin and smooth the surface.
Step 7
Bake in the preheated oven for 2 to 2.5 hours, or until a skewer inserted into the center comes out clean.
Step 8
Let the cake cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
Step 9
Wrap the cooled cake in a layer of parchment paper and then in foil. Store in an airtight container.
