Ingredients

  • 0.5 tsp allspice
  • 0.5 tsp black pepper
  • 100 grams brown sugar
  • 0.5 tsp cloves
  • 3 cloves garlic
  • 1 onion
  • 0.5 tsp paprika
  • 1 tsp salt
  • 800 grams tomatoes
  • 240 ml water
  • 120 ml white vinegar

Directions

Step 1
Combine chopped tomatoes, onion, and garlic in a large pot.
Step 2
Add water, white vinegar, brown sugar, salt, black pepper, paprika, allspice, and ground cloves to the pot.
Step 3
Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for about 45 minutes, stirring occasionally.
Step 4
After 45 minutes, use an immersion blender to puree the mixture until smooth. Alternatively, you can transfer the mixture to a regular blender in batches.
Step 5
Continue to simmer the pureed mixture for an additional 30 minutes or until it reaches your desired consistency.
Step 6
Taste and adjust seasoning if necessary, then let the ketchup cool to room temperature.
Step 7
Transfer the ketchup to sterilized jars or bottles and store in the refrigerator.
