Step 1
Prepare a baking sheet by lining it with parchment paper or greasing it lightly.

In a heavy saucepan, combine the granulated sugar, light corn syrup, and water. Cook over medium heat, stirring constantly until the sugar has dissolved.

Once the sugar has dissolved, stop stirring and bring the mixture to a boil. Cook until the mixture reaches 150°C on a candy thermometer.
Step 4
Remove the saucepan from heat and quickly stir in the peanuts, butter, baking soda, and vanilla extract. The mixture will foam up.
Step 5
Immediately pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula.
Step 6
Allow the peanut brittle to cool completely, then break it into pieces and store in an airtight container.
