Ingredients

  • 1 bay leaf
  • 1 bell pepper
  • 1 teaspoon black pepper
  • 2 carrots
  • 240 ml chicken broth
  • 6 chicken thighs
  • 1 handful cilantro
  • 1 teaspoon cumin
  • 4 garlic cloves
  • 2 tablespoons olive oil
  • 1 onion
  • 1 teaspoon oregano
  • 2 potatoes
  • 1 teaspoon salt
  • 240 ml tomato sauce

Directions

Step 1
Heat the olive oil in a large pot over medium-high heat.
Step 2
Add the chicken thighs and cook until browned on all sides.
Step 3
Remove the chicken from the pot and set aside.
Step 4
In the same pot, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft.

Stir in the tomato sauce and chicken broth, bringing the mixture to a simmer.
Step 6
Add the potatoes, carrots, cilantro, salt, black pepper, oregano, cumin, and bay leaf.
Step 7
Return the chicken to the pot, cover, and simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
Step 8
Remove the bay leaf before serving.
