Wash and peel the potatoes.

Slice the potatoes thinly using a mandoline or a sharp knife.
Step 3
Soak the potato slices in cold water for about 30 minutes to remove excess starch.
Step 4
Drain and pat the potato slices dry with a clean towel or paper towels.
Step 5
Heat the oil in a deep fryer or a large pot to 350°F (175°C).
Step 6
Fry the potato slices in batches, making sure not to overcrowd the pot, until they are golden brown and crispy, about 3-5 minutes per batch.
Step 7
Remove the chips from the oil with a slotted spoon and place them on paper towels to drain excess oil.
Step 8
Sprinkle the chips with salt while they are still warm.
Step 9
Let the chips cool completely before serving.
